The Final Fantasy series has one of the best video game soundtracks ever. Nobuo Uematsu is a genius. Too bad he stopped making music for the series after the tenth one.
The Zelda games have some pretty music, too. Saria's Song is an awesome tune, and Fairy Fountain is really nice to listen to.
Guitar Hero II easily has the best songs out of the entire GH trilogy. Out of my Guitar Hero/Rock Band playlist, a lot of the GH2 songs I downloaded after playing the game because they were just so good.
Kingdom Hearts also has some good music. Yoko Shimomura sounds like a mini-version of Uematsu, but I like Uematsu better.
