I'd have to say Issac (stat-wise, not much to say on character durr) honestly, but I must admit I liked Garet the most, mostly because he's such the punching bag of everyone ( go back and visit Vale after awhile and mind read the people in his house for amusing results.)

Or we can make wet sand, which is actually quite painful if you use it right.

rock projectiles with water cores that flash freeze and expand into spikes that also make the external rock fragments into additional shrapnel.
Mud armor. Constant healing/regen mud armor.
or a stone submarine.
