I believe it is possible to have too many tanks, only in the case of if you don't have enough room in your place or area that you can't properly keep them. Another thing to make sure of is that your not overloading any outlets.
As long as you have enough room and a outlet to use properly then it shouldn't be a problem. ^_^ For example, I have a tiny apartment and due to it I only can use up to three outlets for my tanks at max. Two out of those three are in the living-room. The third is in the bedroom. I don't keep a tank in there though due to my wife not wanting to here the air filter going at night. Due to this I have my three tanks in the living room.
As far as the electricity goes, I always look to see if I can buy any equipment for my tanks or set up my tanks so they'll use less electricity. For example, since I keep Betta it's easier to divide a tank and use one light and heater than two for two different tanks. I also will use one 3i filter for each section up to 3 gallons. This allows filtration plus the effect of the air pump with using only one plug. So a tank divided once for two Betta would run on only 4 plugs instead of 6-8, 8 if you add an air pump. ^_^
