And I watched Diedrich munching on an odd-looking blue fruit -- akebia, the chocolate vine -- from Asia.
AKEBIA is chocolate and vanilla scented.

Actually, I had a serious discussion with Diedrich about how eating too many sweets can raise your blood sugar levels. And he gave me one of these cute little mini pumpkin tarts that is fine for diabetics. (recipe follows)

No one will ever know this simple dessert is diabetes-friendly! It is a holiday treat!
Prep time 10 min
Servings 30 Servings
Serving size 1 tart
Amount per serving Calories 40
Total Fat 2.5g Saturated Fat 1g Cholesterol 15mg Sodium 40mg Total Carbohydrate 4g Dietary Fiber 0g Total Sugars 3g Protein 1g Potassium 30mg
Ingredients
light cream cheese (softened) 8 oz
Mini-Nilla wafer cookies 30
light sour cream 1/4 cup
Splenda Sugar Blend 1/4 cup
egg (s) 1
vanilla extract 1/2 tsp
canned pure pumpkin 3/4 cup
ground cinnamon 1/2 tsp
ground nutmeg 1 pinch
Directions: Preheat oven to 350 degrees.
Line mini-muffin pan with paper baking cups and place one Nilla wafer in the bottom of each cup.
In medium bowl, add remaining ingredients and mix with an electric mixture until smooth.
Fill each muffin cup with pumpkin-cream cheese mixture.
Place muffin pan in oven and bake for 30 minutes or until done. Serve cool.

I think Diedrich is remembering that he is a bunny as well as being a fantastical green critter. classified_diedrich I caught him nibbling on a Kale Salad Wreath that was prepared for an early Christmas party.
If you want to create your own this season, you can catch the recipe HERE And I discovered that the festive red ribbon is created from roasted bell pepper. Decorate the wreath with chopped roasted bell pepper strips. Use the bottom of a roasted pepper to make the loops of a bow for the wreath, with long pepper strips as ribbons dangling from the center of the bow.
